In my younger days, I never understood the appeal of stopping at a roadside farm stand. It was just easier for me to grab my produce during my weekly grocery runs. It wasn't until I got older and a little more wisdom under my belt that I realized how much better straight from the farm to the table that produce tasted. There's a farm about a mile down the road from my house that come the end of July is always packed with cars lined up to get their share of farm fresh sweet corn. I drove by there earlier this week and saw the farmer tending the fields and actually got a little excited knowing that here shortly I would be able to get my greedy little hands on that summertime goodness once again. I'm not saying that the ears of corn are bad that the supermarket sells, but once you've had farm fresh sweet corn, it's hard to go back to enjoying the ears that you find at the grocers unless you load them with salt and butter to combat their otherwise bland flavor. However, I did end up purchasing a few ears of corn this week because I was searching through Golden Blossom Honey for a different recipe and ended up stumbling upon this Grilled Corn and Bacon recipe and felt inspired enough to toss them in my cart because I always get a kick out of grilled foil packet foods.
A savory and sweet combination, this recipe takes bland ears of corn and turns them into a side dish you're going to want to make all summer long. The honey gives it just the right amount of sweetness, and the bacon combined with the grilling process lends a beautiful smokiness to round out a delicious mix of flavors here. The only suggestion I would make outside of the recipe instructions would be to lightly mist your foil with cooking spray before placing the bacon. I had a few issues with sticking in that area, otherwise it was smooth sailing and a recipe the whole family enjoyed.
Ingredients
4 ears fresh corn, kernels cut from the cobs (using a serrated knife seems to work best)2 strips bacon, cut into 1-inch pieces and cooked until just crisp
2 tablespoons GOLDEN BLOSSOM RAW HONEY
2 scallions, chopped

Do you ever make foil packet meals or side dishes on the grill?
Generally, no. I do make foil packet meals in the oven, though. A family favorite is sliced onions and potatoes with sliced smoked turkey sausage (similar to kielbasa). So good! We call them Campfire Bundles, even though no campfire is used.

DeleteIt is so lovely that you have a farm close by, I wish I had one too. Ever since we left our farm I haven't tasted that natural flavour of veggies that we had there.
ReplyDeleteI've never tried roasting/steaming corn in a foil, but sounds like a good idea, I'd put garlic in it too LOL
Foil is generally not good, so I do try to avoid it as much as I can, but you cannot do it always. In one of the recent Dragon's Den clips (that is UK Shark Tank, but better), they had a lady who invented a sort of a chainmail for roasting chicken LOL You put it over chicken instead of foil and it leaves it moist and you can wash it afterwards and use again without toxins from the foil.
You know, I think I heard of something like that chainmail for cooking. I'll have to look more into it to see if we have something similar here.
DeleteMy aunt used to be a city girl. She couldn't understand why her now husband insisted on growing all of their produce on his farm when he could just buy it from the store. That is until she tasted it fresh from the garden. Then the light bulb went on and she was like "oooh, this is why!" lol
I like corn, so I will try this.
