This is a great prepare ahead meal idea. Dice the chicken the night before or morning of, let marinate in the fridge, and half the prep battle is done when you're trying to get everyone fed in a hurry. There are a lot of great meat-substitutes in the grocers if you're looking for a vegetarian version, or mushrooms are always a great substitute for the chicken. The only thing I would add to this recipe are red or orange bell peppers because I love the extra bit of sweetness they provide in dishes like these.
Ingredients
Marinade:
1 tablespoon soy sauce
1 tablespoon apple cider vinegar
1 tablespoon Worcestershire sauce
2 tablespoons GOLDEN BLOSSOM HONEY
2 cloves garlic, minced
1 teaspoon chili powder
1 dash hot pepper sauce
1 1/2 pounds chicken thighs, boneless and skinless
1 tablespoon olive oil
1 cup onion, thinly sliced
1 green bell pepper, cut into 1/4-inch strips
juice of 1 lemon
1/4 cup fresh cilantro, coarsely chopped
1 cup sour cream
1 cup salsa of your choice
4-8 flour tortillas, warmed according to package directions

We love chicken fajitas and I can always use another marinade recipe. No kids left here, but my oldest grandchild is starting preschool. I remember liking back to school season when I was both a kid and a mom. Now, I’m glad to not be doing it! Lol, I think when you get older, just the thought of all that work is tiring!
ReplyDeleteI've never liked them going back to school. I always liked them home with me because I hate a schedule LOL. I agree about the thought of all that work being tiring. After 20+ years of doing it, I am so ready to be done with it. Now, I can look forward to maybe someday being a grandma and enjoying the school years from a spectator side.

Joining me at my shows and selling her own towels at my shows has her wanting to be a small business owner, but even if that doesn't pan out, she will use those tools in every day life for things like buying a home and finances and stuff. It's a much better plan than the psychology degree she thought about pursuing.

ReplyDeleteThis looks delicious! I'm all for quick & easy. Luciana is starting the 4th grade this year. We went today to sign her up for before/after care in preparation for the start of school in September. We took a picture at a mural that she's taken a picture with since kindergarten. Like last year, it makes me want to cry! I can't even imagine prepping my last baby for college. It must be emotional but very exciting!
