I feel like we've become the house for wayward souls this month. It's been a revolving door of people and pets in and out of our house for the past few weeks. Allison has been cat sitting her friend's 2 cats. One of my best friends was in town the other night with her dog. Mariah and Ky just got into town with their two cats. It's a freaking mad house here, I tell you! Needless to say, I've been placing curbside grocery pickups quite frequently to keep everyone fed and happy. With this being birthday week and holiday week all rolled into one, you know me and how I like to keep eats as simple as possible when there's so much chaos afoot. I found this Easy Bake Crab Casserole recipe on Golden Blossom Honey during the summer and had planned on taking it to a BBQ or potluck then, but never got around to it. Thankfully I still had it saved in my notes, because this week was the perfect week to bust it out and put it to good use.
The recipe isn't lying when it says "easy bake" because not only is it easy to prepare, this is one of those recipes that didn't need an extra grocery run since I already had everything stocked in my fridge and pantry. This casserole can be assembled a day ahead of time and baked day of, so if you know company is on the way, that's one less task to deal with once your guests arrive. I'm sure this can be eaten as a meal in itself, but we're big on dips and that's what we ended up serving it as. I baked this goodness up then pulled a sleeve of butter crackers from the pantry and we had us a nice little appetizer one afternoon this week. If you need a quick idea for Christmas still, this is the recipe you're going to want on hand. Ingredients
2 cups crab meat, cleaned and picked8 slices buttered bread, crusts removed
3 cups shredded cheddar cheese
3 cups milk
6 eggs, beaten
1 teaspoon mustard
2 Tablespoons GOLDEN BLOSSOM HONEY
1 teaspoon salt
1 Tablespoon onion, minced
1/4 teaspoon paprika

DeleteThat's a fun way to serve a fancy little dip (and easy to make too? big bonus!). Our big crowd was in yesterday. My oldest child is still here with his sweet family. He's an AMAZING cook and he loves to do it too. Plates it like a chef and it tastes every bit as good as fine dining. We went on a grocery run (because I don't keep amazing things like truffles and hop shoots in the house) and I thought of you when he grabbed a bottle of Golden Blossom Honey. :) I'm being so spoiled this week, it'll seem very bland at the dinner table after they go back home. ;) Here to wish you a wonderful new year!
