This time of the year I would normally be turning to warm comfort foods, like stews, soup, or carb heavy casseroles since it's snowing and freezing in the Midwest right now. But, we've been in Florida for most of January and it's warm, breezy and beautiful here this time of the year so I've really had to adjust my eating habits this month. After spending a day sunning myself on the beach, the last thing I want to do is eat a hot bowl of soup for dinner. Or turn the oven on for that matter. So we've been eating a lot of sandwiches this month. One of the recipes I've made several times over is this Open Faced Tomato Bacon and Blue Cheese Sandwich from Golden Blossom Honey.
This is a light and easy meal idea, perfect for busy week night dinners or for a relaxed weekend lunch. It requires minimal prep and cook time, so you can get everyone fed quickly without complaint. You absolutely do not have to wait for warmer weather to hit before indulging in this sammy. If you're planning a game day menu for that big upcoming football game, you could switch out the bread and make sliders. If you want to swap out the bacon and make this vegetarian, avocado is a delicious replacement. You know how much I love versatile recipes, and this is one that you could make minor changes to each time you prepare it and it would feel like a whole new recipe every time. Try it as written or put your own little personal touch on your sandwich and I'm sure you'll be making this time and time again like we have recently.
Ingredients
8 (3/4 - 1-inch) slices French bread (not baguette)4 slices bacon
2 tablespoons olive oil
1/4 cup shallots, finely chopped
4 tablespoons red wine vinegar
2 tablespoons GOLDEN BLOSSOM HONEY
salt and pepper to taste
3-4 large tomatoes cut into 1-inch thick slices
1/4 cup fresh basil leaves, slivered
1/4 cup blue cheese, crumbled

DeleteI hope you are loving sunny Florida! I've been a cheese lover since way back, but I've never tried Blue Cheese (did it used to be spelled Bleu Cheese? I feel like it did, once upon a time). You have me curious. And yessss to the versatile recipes!
ReplyDeleteIt probably still is. I think I have a jar of Blue (Bleu) Cheese dressing in my fridge. Now I have to go look and see how they spelled it.

ReplyDeleteI'm sorry you weren't feeling well. Sinus colds are crummy. I swear, my daughter gets them all the time. She suffered through one for a week in Florida. She was not pleased to be sick while we were supposed to be relaxing.
