Chili Corn Bread

I haven't decided if I'm going to take the time to watch the game this Sunday or not. I usually watch for the commercials and the half time show, but if we're being honest here, both have been a little lackluster these past few years. But do you know what never fails to shine for game day? The food. Whether we have the game on or not, this weekend I'll still end up putting a huge pot of chili on to simmer. And what always goes good with chili? Cornbread, of course! Since good chili takes time on the stove, while it's simmering there is plenty of time to whip up a pan of yummy homemade cornbread. I love a little spice, so it is only fitting to pair chili with this Chili Corn Bread, a recipe from Golden Blossom Honey. 
 

I admit that I love a sweet cornbread and usually do a mixture of boxed cornbread mix and cake mix when I make a batch. But sometimes it's good to spice things up a bit and if you like a little heat mixed in, this is the recipe for you. The red peppers give it a subtle kick, but it's the canned green chilies that put the bite in this recipe. So, so good! Of course, I always need to slather any bread I eat with butter, but if you want a hot and sweet combination, skip the butter and drizzle honey over the top once it has cooled. That way you'll get the perfect mixture of sweet and heat to go with a comforting bowl of chili this weekend. Sundays never looked so good! 

Ingredients

1 cup buttermilk, low fat, if desired
1 egg
1 Tablespoon vegetable oil
1 Tablespoon GOLDEN BLOSSOM HONEY
1 cup flour
3/4 cup yellow corn meal
2 teaspoons baking powder
1/2 teaspoon salt
1/2 teaspoon baking soda
1/4 cup red bell pepper, minced
2 Tablespoons canned chopped green chilies, well drained

  1. I didn’t even know the Super Bowl was this weekend. I liked the halftime show last year because I thought the stage set up was clever.

    I just started doing the cornbread with cake mix trick a few years ago and it was a game changer. First time my husband actually liked cornbread! In the past, he always complained it was dry. He hates Irish Soda Bread, too. Weirdo.

    1. I was so looking forward to last year's performance. Yes the stage was clever, but they crammed too many artists into one set and it all just felt like each one was rushed. I did end up watching Rhianna's on YouTube this week and didn't think it was horrible.
      Game changer indeed using cake mix in the batter. I do like Irish soda bread, but only if they leave out the caraway seeds. I have never been a fan of them, myself.

  2. That is how we make it here as well, but sometimes we will use mineral (sparkling) water instead of yoghurt or butter milk. We call it proja, though, since corn bread is for the real bread loaf made with corn flour. I think I made a green one with pumpkin seeds earlier this winter and posted it on Facebook.
    We don't have rugby nor baseball here, but the whole nation usually feverishly follows Novak Djokovic's tennis games, but I cannot stand him personally,especially as he supports our dictator.

    1. I think I'll try making this with sparkling water here sometime. You know Allison calls it "spicy water" LOL. She doesn't like the bubbles in the water. Silly child.

We have a culture of drinking mineral water here, but our mineral water is carbonated water drawn from natural springs of mineral water / water which naturally contains a high level of certain minerals, either magnesium or some others, so it is very healthy for your hearth. They bottle it at the springs and sell in shops. You can just drink it like that, or mix with fruit syrup. Since it is mildly acidic you can bake with it and replace yoghurt with it for a more calorie free version. It is especially good for simple scones and also for pizza dough.

  3. I like the addition of heat. I haven't had cornbread in awhile but I do enjoy it when we have it. You're right, it's perfect with chili. I don't care about the game, but we'll watch because I have a sports nut in the house. I do like that the two quarterbacks playing are brothers.

    1. Bonding moments with the little (or not so little) are precious, even if you aren't into the game. I didn't watch it this year, but I do like the brotherly rivalry aspect it had.

  4. Yeah, the food is about the only thing any good about it. Most of it is over hyped and lackluster. I've never paid much attention to it though.
