I like mornings about as much as I like February. Which means, not at all. I am finding though that where I used to wake up and survive on tea alone for the first few hours of my day, as I am aging my body is all but demanding some nutrition in my belly almost immediately upon waking. The joys of getting older, eh? While I don't relish in the idea of crawling out of my warm bed, I am starting to look forward to a smackerel of something tasty for breakfast. Usually it's a pastry, or the husband will have omelettes or oatmeal waiting for me by the time I waddle myself down to the kitchen (because unlike me, he is a morning person and has all of the early morning cooking motivation that I lack). But, now that our spring season is back in swing, he's on the road with our daughter and I'm usually left home on the weekends to fend for myself and the dogs. So what's a girl to do? Turn to her trusty Golden Blossom Honey for easy meal solutions, of course. There I recently found this Orange Zested Granola recipe that I am confident will at least keep sustained every weekend morning from now until May when I have my personal chef, aka Jason, back in the kitchen again.
My favorite thing about this recipe is I get a whole bunch of granola in one go. I was able to fill my biggest baking sheet with the mixture, which means that stored in an air tight container, one batch is going to last me quite some time. I use it in my breakfast smoothie bowls and in yogurt parfaits for extra crunch and flavor, as well as stored in individual grab and go baggies for a quick, healthy afternoon snack. This week I will fill a bowl with this granola and add almond milk for a homemade granola cereal. I personally love the recipe as is since it adds a tropical touch to these dregs of winter. But, this is one of those versatile recipes that you can add your own touch to without ruining the finished result. Chocolate chips, raisins, different nuts, dried berries.... the possibilities are endless. Use this recipe as a base, then let your imagination go wild on the mix-ins. Why not get a little crazy in February since there isn't much else going on this month.

3 cups old fashioned rolled oats1/2 cup toasted wheat germ (found in cereal section of grocery store)
1/2 cup sliced almonds
1/3 cup GOLDEN BLOSSOM HONEY

1/2 teaspoon ground cinnamon
1 cup flaked coconut

What is your least or most favorite thing about February?
This is a great way to start the day. I've recently (this year) started eating breakfast too. It used to be a piece of toast, but now I'm going all out with it and this sounds wonderful.
ReplyDeleteI used to do toast a lot too. Or bagels. Lots of carb heavy breakfasts that sat heavy in my belly. I do love this alternative!
DeleteSuch lovely photos!
ReplyDeleteI'm a morning person like lord Jase! I cook in the morning because after I'm done I can change and not smell like cooking in the middle of the day or evening.
My least fave thing about February is tomcats that come chasing my cats, because this is their month of love. I will see up to two or three strange new tomcats in my yard a day during this month.
Oooh, you're going to get new kittens soon! I hope you have some names picked out for the babies sure to come!
DeleteGreat recipe! I also make a big batch of granola to last us a few weeks. So yummy on yogurt!
ReplyDeleteI hate the cold and snow of February, but this year has been very mild for us. I have always loved Valentine’s Day.
We have been blessed with a mild winter, and for that I'll keep my grumbling to a minimum lol
DeleteThe versatile ones are always good to add your own touch. Do you actually waddle to the kitchen? Need a little more pep in your step haha at least you'd get there faster to eat haha
ReplyDeleteWaddle, scoot, roll.... any way I can get my old bones there for some grub.
DeleteI don't eat a lot of granola, but I'll eat anything with orange zest in it!
ReplyDeleteYay for orange zest! I love it when a recipe calls for citrus zest because you know it's going to be a good one!
DeleteI love granola with yogurt. Favorite thing about February is it was my birthday month. lol
ReplyDeleteI think I told you on Facebook, but if I didn't happy birthday! (belated!)
DeleteMy least favorite thing is the month ends too quickly
ReplyDeleteThat's my favorite thing about it LOL
DeleteOh very good recipe darling
