The weather is still sporadic right now, but those warm days we just went through have my thoughts racing towards all of the good things that summer is about to bring us. Pools, picnics, parties... I'm ready for all of it! I'm mostly itching to get back into gardening though. I am still planning on sticking with just a few veggies this year, but I admit that those gardening videos on Facebook suck me in every time and make me want to expand my variety. I've thought about container gardening on the deck and have read a bit about cutting the eyes off of potatoes and regrowing them in pots. Not on a large scale, but just as a fun experiment to see how well I'd do with growing them myself. While a bag of potatoes are cheap enough at the grocers, I have dreams of homesteading on a large scale in the future and would love to learn on a smaller level before we buy more acreage down the road. We are a big potato eating family, so I am always on the hunt for new and exciting recipes to use them in. One dish that I have never made on my own is potato salad. I do love the mustard and Amish varieties at the grocers, and figured why make my own when store bought has always been yummy enough? But I did recently find this French Potato Salad on Golden Blossom Honey and was inspired by the recent warm weather to try my hand at making it from scratch.
There are some things that are just better made from scratch: spaghetti sauce, whip cream, broths and stocks, bread... It's not very often that I'll switch from store bought to homemade when I already like the pre-made from the deli counter. But as a first time potato salad maker, this recipe had me sold that homemade potato salad is definitely the way to go. With summer coming in hot on our trail, I know that this is a dish I'm going to make frequently all season long. Print it, Pin it, Pass it on to a friend. Ingredients
6 medium potatoes, cooked and kept warm
1/4 cup hot chicken broth
Dressing:
1 teaspoon salt
3/4 teaspoon pepper
2 teaspoon GOLDEN BLOSSOM HONEY MUSTARD
2 teaspoons lemon juice
2 Tablespoons tarragon vinegar
1 Tablespoon red wine vinegar
4 Tablespoons olive oil
8 Tablespoons vegetable oil
3 teaspoons shallots, chopped
2 cloves garlic, finely chopped
2 Tablespoons fresh parsley, finely chopped
1 teaspoon dried tarragon

Do you container garden?
I’m surprised you’ve never made potato salad before as you are such a wonderful gourmet cook! My husband and middle child use containers for their tomatoes and cucumbers. They’ve also done peppers and lettuce in containers, but have cut back on some if it.

DeleteI love that they do/did so much container gardening. I am thinking I'm going to scale back even more on my yard garden and focus on learning more about container gardening this year. Especially with all of the traveling we do each weekend, It might be easier for me to manage pots instead of a whole yard.
Looks lovely! Potato salad here is just boiled potatoes mixed with salt, vinegar and fresh onions. I personally grate boiled potatoes, mix them with some vegeta and ad mayo and then either ad a can of corn, peas or beans or nothing, sometimes just some scallions.
ReplyDeleteBut here is my predicament: after losing initial 5 kilos at the beginning of my Glu and Sugar Free life, I stopped losing weight even though I was fasting. Then I discovered it was because I still ate potatoes, making a mash with them and other veggies for lunch. This week I stopped eating potatoes and I lost additional 2 kilos in two days, so now I'm seven kilos lighter. Looking forward to see if that continues, but it will be difficult finding a replacement for potatoes, because what else can I really eat without eating meat and flour and dairy???? I will probably have to start making lil' omelettes with lentil, pumpkin or oat flour and veggies for lunch as well.
It is all exciting and uplifting and at the same time depressive when you come upon obstacles. But I'm learning.....
That's the beauty of life. You can always keep learning! My goal is to homestead down the line and only eat what we are able to grow on our own land. It will probably never happen to that extent, but I am already researching and studying different gardening techniques and preserving/canning for when we do get to that point. I'm just a hobbiest gardener, but I'd love to be a full time homesteader. Even with all of the fruit and veggie options here, I just don't trust our government to keep our food safe. Or even in supply when times get tough.

DeletePotato Salad is 100% aligned with summer! You've convinced me to pin it and try it. I like homemade potato salad way better than the deli, for sure!! The Publix deli makes this bowtie pasta salad I can't make better at home. Maybe I can ask an employee to give me the recipe (I'm thinking of how they might react, probably like I've lost my mind, lol).
