If anyone has a direct line of communication to Mother Nature, could you please tell her to knock it off? Two weeks ago we were wearing summer clothing and clearing out the garden beds. This week I'm bundled up and freezing again. My mint is already growing like crazy, but because we've been under several frost advisories here, I've had to hold off on planting my veggies for the season. I'm dreaming of fresh garden tomatoes and pots full of herbs to pick from for the next 5-ish months. Being on the road so often doesn't leave a lot of time for home cooked meals, but when we are home, I want to make the best dishes with the freshest ingredients possible, so you can see why I'm itching to get to planting. While they didn't come from my garden, I did come across some beautiful heirloom tomatoes at the grocers last week and bought several with anticipation of enjoying them in a few sandwiches. While I did slice one up for some grown up grilled cheese, I ended up using the other in this Tomato and Herbs on Toasted French Bread recipe from Golden Blossom Honey.
I didn't have any kind of special occasion in mind when I decided to dive into this recipe, other than having summer days on my brain. These little breads are so perfect to take along on an afternoon picnic. Just pop the tomato and herb mixture into one container and the toasted bread into another, and you've got yourself a light lunch to enjoy on a nice spring or summer day. Pair it with fish or chicken for a quick weeknight dinner, or I'm thinking with Mother's Day coming up, they would be lovely for brunch with mom or grandma, too. I'd probably go as far as even topping the bread with a little mozzarella or brie cheese before toasting for a little more elegance for a dinner party, but even leaving as is, it's still quite an impressive recipe. It's one that can be used for family dinner at home or for large summer gatherings. There's no need to have a special occasion in mind for this recipe, but if you need something that's a crowd pleaser this summer, you're covered here!
Ingredients
1 pound fresh plum tomatoes, peeled and chopped
1/4 cup fresh basil, finely chopped
2 garlic cloves, minced
1/8 cup fresh oregano, finely chopped
1 teaspoon GOLDEN BLOSSOM HONEY
1 teaspoon red wine vinegar
1 Tablespoon olive oil
1 teaspoon fresh lemon juice
1/2 teaspoon salt
1 French Baguette sliced in 1/2-inch slices

Yes, I think we had a frost advisory last night. It seems like I hear hail every time it rains lately, but it’s tiny and doesn’t last long. The tomato spread looks delicious.

DeleteThose heirloom tomatoes look big and juicy and sweet! It is mostly warm over the day here and then below ten at night, even under five degrees, which I personally like and prefer, I love to take my evening walk with the cats bundled in my big winter jacket. It is May Day picnic day tomorrow here, so I hope people will have nice weather for it at least.
ReplyDeleteAwe, you bundle your kitties and take them for walks? Mine are indoor only kitties, so they'd freak out if I took them for a walk. They don't even like going to the car when we have to go to the vet or on the rare times we take them traveling with us.
DeleteThat is a bit sad, but I understand why you keep them inside. Mine were always outdoor cats. Dzelyana actually gave birth last night up in the attic, she announced it to me and then went to do the business, came for some kibbles and milk at noon today. She will probably bring them down in about two months or so.
