Today marks our 20 year wedding anniversary. I always thought I'd be celebrating this milestone in Hawaii, but life has many twists and turns and sometimes things don't play out the way you imagine them. Instead of sitting on the big island sipping mai tai's, we're in Georgia today. We're here for the Atlanta Women's Expo, but I'm not even mad I have to work on my anniversary because work brought me to my best friend, who I don't get to see much these days since she moved to the Peach State. And short of Hawaii, I can't think of a better way to celebrate than with good friends by our side. We'll probably keep it low key with a pizza party at her house, but I did end up making us a special dinner earlier this week before we left since I knew we wouldn't have time to celebrate just the two of us today. I wanted to keep it simple yet classy, and when I want that combination, pasta is usually my go-to. I ended up browsing through Golden Blossom Honey's recipe index and came across this Pasta with Sausage, Caramelized Onions and Spinach recipe that I knew Jason would love.
Ingredients
1 pound gemelli pasta, cooked according to package directions
1 tablespoon olive oil
1 large onion, peeled, cut in half lengthwise, and sliced
1/2 teaspoon salt
2 tablespoons GOLDEN BLOSSOM HONEY
8-12 ounces spicy Italian sausage, casings removed, sausage meat crumbled
1 pound plum tomatoes, coarsely chopped
1 pound fresh baby spinach leaves
pinch red pepper flakes
1 cup grated Parmesan cheese, divided
