French Country Chicken

Now that my daughter is an adult, we've finally come clean that when she was growing up we used to recycle gifts for her to give us on holidays or special occasions. She never really paid attention to what she was wrapping for us, she was just excited to be giving mom and dad a gift. So when we told her that she gave Jason the same tool about 7 different times, she was like wtf? LOL. She likes to complain that we are the hardest people on the planet to buy gifts for, and I agree with her to a point, simply because as we age we are trying to decrease the amount of material items we have in our home. But we love consumables. For me, I'd love a candle or a box of my favorite tea. For Jason, it's always food. Either a dinner out or a home cooked meal would make him the happiest. But this year she did find a pretty good gift in the form of an experience, but I can't share with you just yet to ruin her surprise. Normally she'd scour the internet looking for a unique recipe, but since she is off the hook for coming up with a meal worthy of a special occasion, I thought I would share a recipe that's perfect for many dads this Father's Day in case anyone needed any inspiration this year. After saving this recipe from Golden Blossom Honey, I made this French Country Chicken a few weeks back for dinner and it was a huge hit with Jason. 
 
 
While this recipe is fancy enough for Father's Day, you certainly do not need a special occasion to serve this meal. Because there are so many veggies in this dish, I also think it needs to be saved by those who are doing some serious gardening this year. It's a great way to use up extra produce before it goes to waste. You can serve the chicken over a bed of white rice, but it would pair with pasta beautifully as well. Vegetarians do not need to shy away from this recipe. Simply replace the chicken breast with a grilled portobella mushroom cap and it's *chef kiss* delicious. Don't let the number of ingredients steer you away from trying your hand at this recipe. With a good chopper, this could easily be on the table in under 45 minutes.
 

Ingredients

3 tablespoons tomato paste

2 tablespoons GOLDEN BLOSSOM HONEY

1/4 teaspoon salt

1/4 teaspoon pepper

1 cup chicken broth

1 clove garlic, minced

1 tablespoon olive oil

1 tablespoon butter

2 whole chicken breasts, halved, skinned and boned

1 cup carrots, diced

1 cup red onion, diced

1 cup zucchini, cut into 1/2-inch chunks

1 cup yellow squash, cut into 1/2-inch chunks

1/4 cup dry red wine

1 tablespoon balsamic vinegar

2 cups cooked long-grain or basmati rice

2 tablespoons fresh parsley, chopped

  2. LOL on the gift recycling for yourselves! I feel as though my kids would remember what they gave us?? Well, Middle Child would for sure. She'd even be able to tell you what day of the week it was given. But yeah, my kids have had a lot of wtf moments, looking back at their childhoods. We did the best we could!!! LOL!

    I'm not even sure when Father's Day is . . . .

  3. Chicken is sure a win indeed. Lmao the same tool 7 times? hahahahaha Well at least it got its gift's worth. I'm super hard to buy for too as I don't want nor need things. But money always works, and that is what I get.

  4. Super curious to hear what she came up with for the experience! Every kid here (and you know 3 of them are not really 'kids' anymore) love chicken. I don't mind giving this a try. On a side note, you mentioned it has lots of veggies and it reminded me of a call I had with my oldest yesterday. He was getting ready to eat and I asked him what he was having. He said, 'my body was craving veggies, so...' and I had to laugh. That's not something I'd have thought he would have said when he WAS a kid. ;) He's a great eater though, and pretty much has been since he was a tween. :) Happy Early Father's Day to Jason!

    1. It's funny what our bodies start to crave as we age. I find I crave certain veggies at different times. I do think when I crave things like zucchini, it's my body telling me I'm dehydrated. I do think your kids probably have great eating habits. They all look so fit, I can't imagine them eating too many unhealthy foods.

  6. MMMM that chicken look delicious! We are also trying to downsize and purge 'belongings' that are unnecessary. Consumables are definitely the best!
