Upside-Down Marsala Apple Cake

The kids have all started back to school in my area, and while I do realize it is still summer, for me bts marks the unofficial start of fall. Once August hits, we start to lose about 2 minutes of daylight each night, so while the temps are still up there, the waning light means that autumn is almost here. I'm slowly switching my fruit and veggies from the likes of berries and tomatoes to apples and corn. I was thinking about raiding our local community pear tree that's hidden on school grounds earlier this week, but never made my way over there. I did, however, purchase a bag of granny smith apples and lit some fall scented candles, then somehow convinced Jason that we should pull out the Halloween decorations from the attic so we could hang it all up next week (yes, I know it's still too early for that, but idc. stop judging me lol). With the autumn vibe in my house right now, I thought I'd take those freshly bought apples and whip up some kind of bread or dessert. I was thinking an apple cinnamon quick bread would be nice, but instead ended up making this Upside-Down Marsala Apple Cake from a recipe I snapped up on Golden Blossom Honey.
 
 
While I am usually a white wine drinker, someone gifted me a bottle of Marsala wine at Christmas and it just isn't one I'd pour myself a glass for consumption. I do like to have it on hand for cooking though, so I was happy to have this recipe available to use some more of the wine up. This cake really embodies the essence of fall. From the tart apples to the warm cinnamon and the earthy walnuts, I ate my slice while envisioning crisp days and the distinctive fall scent that Mother Nature tosses into the air when the season starts to change. You won't find a dry bit in this cake. Your teeth will sink right in! Enjoy it with a hot cup of tea, coffee or cider this autumn and really embrace the best of what the season has to offer!
 

Ingredients

1/4 cup plus 6 tablespoons butter, softened

1/4 cup GOLDEN BLOSSOM HONEY

1/4 cup brown sugar

1/4 teaspoon cinnamon

2 large Granny Smith apples, peeled, cored and cut into 1/4-inch slices

1/2 cup sugar

2 eggs

1 teaspoon vanilla extract

1 1/2 cups flour

1 1/2 teaspoons baking powder

1/2 teaspoon cinnamon

1/4 teaspoon salt

1/2 cup milk

1/4 cup Marsala wine

1/2 cup walnuts, toasted and finely chopped

  1. Are you crazy, sister??? It is still August, how can you put out Halloween decor already? You have become "that lady" LOL
    The cake looks most lovely, I love everything with apples and cinammon, I do. And lovely photos!
    I still have not eaten almost none of the summer fruit, maybe just two melons and three times some nectarines, so I do not have a feeling that summer is over, although we did have a cold week with winter temps at night, which I loved, however they say it will go over 35 degrees again from Monday, so hell is back. I did not even have to use my AC this week as I was managing to cool off the palace over night. I slept very well this week, without waking up at night.
    It is true that it is getting darker earlier now as I have not seen my hedgehog Jozo for a week now, he comes out when it is too dark for me to see him now.

    1. Leave me and my Halloween decorations alone LOL. I didn't get around to putting them up yet. I am thinking I will in another week or two when it slows down a little here.
      Awe, do you miss little Jozo? Have you seen his little friend anymore in the yard or was that a one time sighting?

  4. I’ve never heard of baking with Marsala, so that recipe is a good find! We are just now getting a good crop of tomatoes from our garden, so I made panzanella salad last night. I won’t even consider fall veggies until September as we are swimming in cucumbers and peppers right now.

    1. Panzanella salad sounds so good! I'm still eating a ton of salad, though I'll slow down a bit here in another month and switch to more comfort foods. Yay for a good cucumber and pepper crop for you this year!

  6. This cake really does sound good, so I'll give you that. But all the reminders of fall I had to somehow block out of my head. I'm not ready for that yet. And back to school! Before August 15th! That's criminal!
