We've had a bit of rain here lately and it's expected to carry on through the weekend. Call me crazy, but that makes me pretty happy. Why? Because chilly, drizzly days are the perfect excuse to put life on hold. I'll make some baked goods, brew some tea, then settle in for the afternoon with a kitty on my lap, a dog at my feet, and a good book in my hands. I love how cozy the house seems when it's filled with the aroma of a wet afternoon and baked goods wafting in the air. Because it's the season of pumpkin everything, this week was a perfect time to try out a new recipe that I found on Golden Blossom Honey for Orange Pumpkin Muffins.
I've never combined orange and pumpkin together in any of my baked goods, but the flavor combination intrigued me. I usually save any orange flavored baked goods for summer or for the Christmas holiday, but I had all of the ingredients on hand for this recipe and figured it was fate telling me now was the time to give this recipe a whirl. These come out sweet as you would expect with anything citrus based, but the spices lend a nice overall warmth to the muffins. Absolutely perfect as is, but I'm a butter lover and always add a hit of butter to my muffins and breads which took them up a notch for me. I did think about on my next batch playing with the recipe just a touch and adding a brown sugar streusel crumb topping before popping them in the oven. Definitely not necessary because these are sweet enough as is, but experimenting is half the fun in the kitchen. These pair nicely with a hot cuppa tea or coffee, so I couldn't have asked for a better recipe for my rainy day weekend plans.
Ingredients
1/2 cup walnuts, chopped
1 1/2 cups flour
1/2 cup whole wheat flour
2 teaspoons baking powder
1 teaspoon baking soda
1 teaspoon salt
1/4 teaspoon ground nutmeg
1/4 teaspoon ground cloves
1 large seedless orange, cut into 4 sections
1 egg
1 egg white
2/3 cup solid pack pumpkin
1/2 cup firmly packed brown sugar
1/4 cup GOLDEN BLOSSOM HONEY
3 Tablespoons vegetable oil
1/2 cup dried apricots, chopped

What is your favorite thing to do on a rain day?
I hate rainy days, so I suppose my favorite thing to do is bitch about it. I’m meeting friends tomorrow for a mini college reunion and all our plans involved outdoors. Not sure what we will do now besides drink 🤣

ReplyDeleteWe are supposed to have rain and winter temps all week long next week and I am supposed to go to Novi Sad as I have been delaying it for too long because of my leg. Don't know what to do.
I hope you had a successful trip to Novi Sad, minus the sickness you caught on the bus!
DeleteThe trip was OK minus the shit I caught in the bus and are still fighting against and all the fecking monies I had to waste on taxis. I wish they could just put money on my account instead of me wasting money for the trip, but I guess at least I get to travel somewhere occasionally.

DeleteI like everything about this! I love muffins. And I love using all of the orange. I've never thought about this particular combination of flavors, but it sounds worth a go. I also love that you used whole wheat flour.

DeleteOkay, this is a recipe I could fall in love with... and hurrah for finding a new flavor combo I've never tried. I don't usually add butter but when I whip up a batch of these, I'll add a pat of butter in your honor!
