With the three of us having a birthday in this house next week followed by Christmas a few days later, I've been brainstorming different dinner ideas that aren't going to cut into too much celebratory time. This is the most exhausting time of the year for me and if anything eats up too much of my day, it goes on the back burner until the New Year rolls around. Short of the nieces and nephews we'll see on Christmas Day, we are no longer in the stages of having to meal plan around littles during the holiday season. After years of chicken nuggets and mac and cheese being high on the food list, the last couple of years have been fun getting to try different recipes that are geared more to the adult palate. I don't know how long I've had this Onions Baked In Wine Sauce recipe from Golden Blossom Honey saved, but as I was meal planning last week, I thought it would make a great side dish to the rotisserie chicken we picked up from Costco for a simple dinner that night.
As I prepped the onions for baking, I couldn't help but think about how these would make a really nice addition to the Christmas or New Year's meal, also. Onions pair well with holiday ham, roast or turkey, and these onions couldn't get any easier to whip up. Simply slice, mix and bake and you've got an effortless side dish on the table that practically makes itself in an hour. And let's face it. During this time of the year we all need a little help on time management, so uncomplicated recipes are always most welcome. The recipe does specify to use a dry white wine, but I am obsessed with caramelized onions so I went with a moscato instead. Because moscato is on the sweet side, it will caramelize the onions a lot faster in the oven, which I like. This just all boils down to your personal preference, but whatever wine you go with will work beautifully here. It's simple. It's classy. It's delicious. One that we'll have on our holiday menu for many years to come.
Ingredients
4 medium yellow onions, peeled and halved crosswise
1/2 cup dry white wine
2 tablespoons GOLDEN BLOSSOM HONEY
Topping:
1 tablespoon butter
1/2 cup Panko breadcrumbs
1 tablespoon fresh parsley chopped
1/2 teaspoon dried thyme

ReplyDeleteOoooh, 'tis the Birthday week already! Da phook did the time go so quickly? Hope ya get my gifty gift in the upcoming days, but given the strike that we had, Luciphur only knows when it will arrive across da pond.
I don't think I will prepare anything for holidays, not mark them in any special way, I don't feel the atmosphere this year, plus I will be depressed by Sunday's elections and I also have to start a 700 pages Wild West classic translation today which will keep me busy for two months at least. I will just put two Santa Clauses on the table and that will be all. I don't even have any festive chocolates to eat this year. everything was boring.
Where will you be spending holidays?
Fried are my favorite with onions, but I do like them baked too. Not plain, but with some butter and some seasonings usually.

We will now spend Christmas Eve at home since my mom has Covid. We'll still be at Jason's parents for Christmas dinner though. I am just ready for the season to be over with. I'm tired and not in a festive mood. My bestie will be up from Georgia on the 27th though, so that gives me something to look forward to. I haven't seen her since June, so I'm pretty excited about that at least.
