Happy New Year! I've mentioned before that I don't subscribe to making resolutions when the clock strikes midnight, but I don't discount anyone who does. For me though, now that the holiday season is over I'm making conscious choices where home cooked meals are concerned. Not because of any resolutions, but because I fell into a few bad habits during the holidays and need to get my train back on the right track. Winter is hard enough to get through, especially if you suffer from seasonal depression, so choosing nutrient dense foods help give you a boost of energy so you can fight off the sluggishness that the cold, gloomy months bring. Couscous and chickpeas are a pantry staple in our home, so when I was looking for a quick lunch idea earlier this week on Golden Blossom Honey, I came across a recipe for Couscous with Edamame, Chickpeas and Tomatoes that sounded too good to pass up.
My whole family loves edamame and it's one that we buy in bulk from Costco and eat in the shell at least once a week. We steam them then toss with a little sea salt for a quick side dish. I have never bought them shelled, nor mixed into a recipe, so I was intrigued on how this was all going to come together, especially without the addition of sea salt. I found that the combination of ingredients here was all over the place, but in a good way, coming together perfectly for one satisfying dish. Jason, of course, had to mention that "This is so good. Make it again, but add some sausage next time." He's a meat and potatoes guy through and through, so any vegetarian based meal that gets the "make it again" comment is a winner in my book, even if I have to modify it for him with a handful of crumbled sausage. At least I know he's getting nutrition mixed in with the sausage. Whether you have some health goals to reach this year or just want a tasty, nutritious lunch or dinner, this recipe is one to add to the meal plan. And it's not a seasonal meal, so it will carry you through all year long.
Ingredients
1 tablespoon olive oil
1 1/2 cups edamame, shelled (you can find frozen shelled edamame in most markets)
1/2 cup red onion, chopped
1/4 teaspoon red pepper flakes
3 large cloves garlic, minced
2 1/4 cups water, divided
1/4 cup fresh basil, chopped
1 (16 ounce) can chickpeas, rinsed and drained
1 (14.5 ounce) can diced tomatoes
2 tablespoons GOLDEN BLOSSOM HONEY
3/4 teaspoon salt
1 cup uncooked couscous
1 cup feta cheese, crumbled

Looks lovely, I have never had me edamame nor couscous, I should probably try couscous but I have to investigate what grain is it made from.
ReplyDeleteMy resolution for 2024 is not to die from work, as I have two 650 page long books to finish till May, which means I will literally have time for nothing. It will be completely insane and both books are terrible and female oriented which makes it even more difficult.
I don't think you can do couscous. I believe it has gluten in it

I used to buy edamame in the snack bags and I've had it on salads but I've never cooked with it. This recipe looks good and per usual your pictures are on point!

DeleteNo resolutions for me. I’m not a big fan of edamame, but I love the rest of the ingredients. I could eat feta on anything!
