Shrimp and Kalamata Olives with Pasta

I know I'm way late to the game, but I've finally joined the Aldi bandwagon. We used to visit there often when I was little and I didn't have fond memories of our shopping trips then. The stores always seemed crowded, disorganized, and honestly a bit dirty. But our local store recently went under a complete renovation and my daughter had been wanting to check it out, so we drove over to see what we could find. Um, why didn't anyone tell me what I've been missing out on all of these years? The cheese selection alone was enough to sell me on the store. As we browsed the aisles tossing things into our cart for our weekly meal plan, Allison found some shrimp and suggested that we might have scampi soon. Shrimp, while it is one of the very few seafood I'll consume, isn't very filling, imo. But, tossed with pasta makes it a complete and filling meal. I did a quick search on the Golden Blossom Honey recipe page while still in store to see if they had a suitable recipe that we could grab ingredients for while already there, and sure enough they did! We ended up grabbing everything we needed to make Shrimp and Kalamata Olives with Pasta for one of our dinners this week.


While I actually wasn't looking for an effortless recipe this week, I was pleasantly surprised at how quickly this meal came together. The longest part of the process was waiting for the water to boil. There are so many flavor notes in this dish that compliment each other impeccably, I opted to pair my plate with a red wine to enhance it even more. I felt a bit guilty that my husband was away for the week and didn't get to experience the tastiness of this dish, but not too guilty since he did get Florida sunshine while we were stuck in the snow and cold. This is the kind of meal that would be perfect for date night at home or for any celebratory occasions, but works great for weeknight dinner as well. I'll definitely be earmarking it to make again soon so Jason has a chance to indulge in the deliciousness of this recipe, too.

Ingredients

3 scallions, chopped

2/3 cup parsley, chopped

2 tomatoes, chopped

1 tablespoon GOLDEN BLOSSOM HONEY

1/3 cup Parmesan cheese, grated

6 tablespoons olive oil

3/4 pound medium shrimp, uncooked

3 garlic cloves, chopped

2 tablespoon lemon juice

1 pound linguine

1/3 cup Kalamata olives, pitted and chopped

  1. We have Lidl but that is very similar to Aldi, I need to go on Monday as honey is on sale for the first time in a year or more, hope I find some. It is also the only shop that has vegetarian offer that is even remotely likeable.
    Now that they destroyed my bridge and I have to walk 50 minutes to the city, Lidl is actually on my way.

    1. Do your Lidl's have fresh bread machines that you push a button and a freshly baked loaf comes out? I just saw that some Aldi has those in Europe and I am sooo jealous we don't have that at ours here.

    2. No, that is too sf for us LOL even the machine that cuts the bread in Lidl is something new and futuristic for us, but I don't eat bread so I never used it. I generally don't like their bakery department.

  2. Very yummy dish!!! I’d have to have it over zucchini noodles though. I go to Aldi about once a month. There are just a few things I like, definitely the cheese section and the Everything But the Bagel seasoning. Their prices have really gone up, so they are no longer that great of a deal for me.

    1. I have noticed that the national brands are equal to other stores, but the produce is much better priced than what we get here. I will have to look for their bagel seasoning next time. Their gelato is $3, which is 1/2 of what we pay elsewhere and it is really good if you haven't had it yet.

  3. Never even heard of Aldi before. They don't have them here that I'm aware off. Sounds like you scored though and got a new effortless recipe.

  5. I have a good friend who loves Aldi's. She was in my car about a year ago and asked to stop for something. I wasn't overly impressed with the store. Maybe it just needed a refurbish. It was like the one you described in your childhood. And you had to pay a quarter for the cart and there were no bags. I didn't like it. But now we have a Sprouts that I do like to visit sometimes and they charge 10-cents a grocery bag, lolol Ah well, the dish you made looks good.

    1. We had to pay 10¢ per bag in CO too and that miffed the heck out of me. We pass them out like candy in the midwest! Plus, I pay 2¢ per bag for my business. Where is the extra 8¢ going?

  7. Welcome to the Aldi bandwagon! I have a similar story, really. I didn't used to think that Aldi was someplace I was interested to go, but they also rennovated the store near me, and I wanted to check it out, and I'm pretty happy with it. I can't do all my shopping there, but I'm always happy to check out what they've got.
