Salads are always a quick and easy meal option, but my husband requires a protein to be included to make it a "full meal", so this one was a no-brainer for dinner this week. Of course this salad will take a little more time than just fruit and veggie varieties because of the time it takes to fry the chicken, but it's well worth the extra effort. I love to mix nuts and fruits into my salads because I like the added textures and sweetness, but it's always the dressings that excite me most when piecing together a salad. I've found many dressing recipes from Golden Blossom Honey over the years that I've loved and have made time and time again, but this one is by far my favorite yet. The lemon gives it sweetness, the honey mustard a touch of tang, and a bit of a bite with the vinegar. So many amazing flavors wrapped into an uncomplicated dressing that's going to be my jam all spring and summer long. Ingredients
Chicken:
4 Tablespoons lemon juice
2 Tablespoons GOLDEN BLOSSOM HONEY
1 1/2 pounds chicken tenders
6-8 cups various leafy greens, torn into pieces
1/2 cup almonds, toasted
1/2 cup golden raisins
3/4 cup flour
1 teaspoon paprika
1/2 teaspoon salt
1/2 teaspoon pepper
1 cup vegetable oil
Dressing:
4 Tablespoons fresh lemon juice
2 Tablespoons Golden Blossom Honey Mustard
2 Tablespoons white wine vinegar
3/4 cup olive oil
salt and pepper to taste

Gorgeous colours, deary, I always love it when you use yellows in your table designs, especially with lemon and now is the season of daffodils so it is perfect timing, I've turned all my computer yellow with the design and daffodil wallpaper :)
ReplyDeleteDaffodils are currently blooming, the early ones, we will have the late ones too, hyacinths are in full swing, violets too, forsythia as well. Tulips are all out with leaves,but will bloom next month. And then lilacs in late april or may.
I always love photoing yellows and greens. I hate reds and oranges. Blues are fun too, though. Our daffodils finally just bloomed here and I noticed my hyacinths have popped though this week. When we were in Georgia 2 weeks ago, their lilacs were in full bloom and were massive in size. Nothing like what I've seen here in the Midwest. Even Jason kept remarking how big and pretty they were. Must be a southern warmth thing that makes them bloom big like that.
DeleteOurs are now in full bloom too, red tulips are finished, now we only have lilacs and yellow tulips and also some dark violet irises in front of the house.

ReplyDeleteI bet your flowers bloom much sooner than ours, with your warm climate. In Georgia where we were last week, I was impressed with all of the flowers that were already in full bloom because of their warmer temps than we get in Indiana.

DeleteYou're so lucky everyone eats greens. My 16 year old still fights it every time. To get a veggie in him daily he only wants peas or corn, and I don't think corn counts. 16! He's supposed to have outgrown this aversion to veggies. Still work on it all of the time. Nutrition matters and one day he'll recognize and want to eat them vegetables (I hope, for his sake). Lemon chicken would go fast with my other 3 around. They're huge veggie eaters, no matter the toppings (or sans). :)
ReplyDeleteI'm sure in due time he'll love those veggies. It took me a long time to appreciate them, myself. Luckily, my girls have always loved them. Sometimes raw, sometimes dipped in ranch, but they never shun their veggies.

ReplyDeleteI noticed tulips popping up in my neighbor's yards, so I think even though spring officially started a few weeks ago, I can finally feel like spring is here. Tulips always mean the arrival of spring for me.
