Roasted Vegetable Salad with Feta Cheese

How are your gardens coming along? My veggie plants are still in the early stages of growth, but here in the next week or two I'll be able to pick blueberries, cherries and raspberries from my yard, so I'd say I'm off to a good start. My daughter tells me that there's a new movement amongst the younger set where gardening is growing in popularity, not only because of the increasing cost of groceries, but also because of the concern of what companies are putting in and on the foods we consume. Getting back to the roots of homesteading and organic gardening seems to be taking off, and I am so on board with this movement. While my veggie plants will take a little more time to produce, I have been planning out all of the ways we'll use our bounty once it's ready for picking. I love a fresh summer salad and was excited to come across this Roasted Vegetable Salad with Feta Cheese recipe from Golden Blossom Honey because it includes all of the easiest to grow veggies that are found in most beginner's gardens. 

 
Zucchini, squash, and peppers grow in abundance here, and while I've never tried to grow onions or lettuce, I'm sure both of these are fairly easy for new gardeners to learn to grow. I am a salad dressing girl and must have it on all of my salads, so I was quite surprised to find that I didn't need any extra dressing with this recipe because it boasts of a combination of smokey and sweet flavors that keep the taste buds tingling. Honestly, I always think of roasted veggies more in the winter months, but this here is a perfect veggie summer salad if there ever was one. Once those veggies start popping up this summer, make sure you grab this recipe and enjoy a freshly picked produce salad straight from your own garden. 

Ingredients

1 red bell pepper, cut in half and seeded

1 teaspoon plus 1 tablespoon olive oil

2 medium yellow squash, cut into 1/2-inch chunks

2 medium zucchini, cut into 1/2-inch chunks

1 small red onion, cut into 1/2-inch chunks

1/4 cup feta cheese

4 cups baby romaine lettuce leaves

Dressing:

2 tablespoons red wine vinegar

2 tablespoons GOLDEN BLOSSOM HONEY

1 tablespoon fresh rosemary, chopped

    I won't have any raspberries, probably never ever, because mother has plucked out my bush and now I don't have any.

    2. It wasn't she is just evil like that. In last ten years brother and mommy dearest plucked out at least 40 to 50 of my little conifers, lilacs and raspberries for no reason other than being vile and spiteful even though they would never admit it.

  3. Absolutely! It’s very popular here, plus there are community gardens for people who lack yard space. We really only have luck with tomatoes and green beans. My husband has been battling the chipmunks this year who keep digging up his cucumber seeds. We’ve spent way more on seeds, dirt, and fences than I’d be spending on veggies at the store, so there’s no savings for us!🙄

    1. The birds got to most of my cherries this year. I forgot to put a plastic bag before the tree fruited so I only got a small amount. Sorry you're battling those dang chimpunks. I'm sure they appreciate the bounty though LOL

  4. That is trendy among the younger set here too! My daughter has said more than once how much she would love to have enough vegetables in her garden to never have to buy them from a store again. My oldest has always more fruits and veggies in his house than anyone I know, AND the last time I went to my second oldest son's house he had so many healthy things in the refrigerator I almost fainted! Being careful what we consume really does matter to them and I'm so glad it does. Now to get my youngest (who just asked me if I would pick up some 'hot fries' when I went to the store) on board. Still a work in progress. ;) Nevertheless, this salad would be welcome here. I love the variety and that it was so flavorful you didn't need to overdress it.

    1. Those hot fries lmao! Allison still asks for those, so I fear you're in for the long haul with your youngest still wanting those unhealthy snacks. Thankfully, we know that most outgrow that phase eventually.

  6. Looks like a good salad indeed. I've noticed more gardening too, mostly due to cost and the garbage in food. Gotta watch the soil though too with all that nano plastic crap leeching everywhere.

    1. Indeed! It seems like even trying to feed ourselves is an issue with all of the plastic pollution. We've sure done a number on our earth :(
