Gorgonzola on Wheat Crackers

I was going through my spice rack and noticed that many were past their expiration date. Like, WAY past their use by date. I had mustard powder that should have been tossed in 2016! We had a little free time this week, so we did a deep clean of the refrigerator and pantry to get rid of the old and make room for the new. It's amazing how quickly things accumulate in both of those spaces! I probably threw out 2 garbage bags full of expired or stale items, and given the current cost of groceries, that caused me a bit of irritation. Before hitting the grocers for a fresh food supply, I decided we were going to use up as much of the still good stuff that we already had on hand so we weren't throwing money in the garbage again. I had half a box of Triscuits Crackers and a whole brick of Gorgonzola Cheese, and Golden Blossom Honey came through once again for the perfect recipe to use them both up with this Gorgonzola on Wheat Crackers, which made an excellent predinner snack. 


These crackers make for an excellent appetizer or as a picnic basket filler for those warm summer days that are still ahead of us. These couldn't be easier to prepare, so I'd say they are perfect for snacking just because, also! I've never infused my honey with rosemary, but thought the little hint of the herb was divine, especially paired with the earthy flavor of the cheese and the slightly bitter profile of the scallions. I am not posh or pinkies up, but if I were trying to fake like I was, I'd serve these if I had to piece together a fancy dinner menu. I will surely revisit this recipe this Thanksgiving or Christmas if we end up having to host family dinner at our place. But in the meantime, I'll be making it here and there, even if I don't have a fridge or pantry clean out scheduled.

Ingredients

1/4 cup GOLDEN BLOSSOM HONEY

1/2 tablespoon fresh rosemary leaves

pinch of salt

gorgonzola cheese

20 wheat crackers, such as Triscuit, or Kashi Heart to Heart

2 scallions (white and light green parts only), chopped

    Geesus, sister, I don't think I've ever thrown out anything, nothing expires under my patrol because I don't buy too much, just what I need and use, I never have too much of anything. Those things can only happen with medicines, because you don't really use those daily, so sometimes I have to throw out some pills or eye drops or shit like that. When I hurt my knee I unnecessarily bought two tubes of gel for bruises and used just one, so I will probably have to throw out the other one at some point, also eye drops which I keep in my house if I need them but since that happens once or twice a year they expire quickly.

    I went hungry in my life way too many times, went through wars and bombings and inflations, so the thought of throwing away food just unsettles me deeply. Also them bitches at Facebook that will make giant cakes and dishes who can eat more, they piss me off to no extent. I watched some silly imbecile stuff tones of bought chocolates and candy into a massive plastic container, cover it with peanut butter and ice cream and then eat it all with a spoon. Made me vomit.

    1. You've seen how big our packages are here in the US. It's easy for things to pile up. Even more so when you do food photography. I do give a lot away on our local free group if I know we won't use it in time after my pics are done. Oh, those stupid over the top facebook reels piss me off also. There's this one girl who makes the dumbest shit and wastes so much food just for shock value to get clicks. And they wonder why we have an obesity and diabetes problem here. "Influencers" encouraging that garbage.

  2. Never? LOL, my fridge is never full. I tend to use stuff up before I buy new.i probably do have spices that aren’t fresh, but I’ve read that spices don’t go bad, so I’m not going to worry about it.

    1. I think spices are usually fine, but the mustard powder that I had that was way past its date did taste a bit funky, so in the trash it went.

  3. Darn, 8 years is a long time to be expired lol sucks when you think about the money aspect too. But we're probably cheaper a decade ago. Even I could make those.

  5. It's always surprising how quickly things can pile up and expire in the pantry! A deep clean is such a good idea—though it’s frustrating to see how much we waste. Your solution to use up what you have before buying more is smart. Gorgonzola on Triscuits sounds like a delicious way to repurpose those ingredients. It’s a win-win: no waste and a tasty snack!

  7. I destest throwing out food, so I can imagine how you must've felt. Using up ingredients is one of the trickiest part of being a home cook.
