Warm Goat Cheese and Mixed Greens Salad

Is there a limit to how many salads one should eat during the summer months? If so, I've probably far exceeded that number. Salads are something that I serve the family year round, so I do try to keep a variety of recipes on hand to keep the family from growing bored when I do end up serving it for lunch or dinner. My husband obtained a love for goat cheese a year or two back, never having been a fan of it before we hit a French bistro in Chicago where it was served on our sandwiches, and from that point he was a mega fan. I know goat cheese is hit or miss with the readers that stop by here, so I try to limit how often I feature a recipe that includes it as an ingredient. But this week this Warm Goat Cheese and Mixed Greens Salad recipe from Golden Blossom Honey was calling out to me to serve it for a quick dinner and with summer still hot on our heels, I figured this would be the perfect week to share the recipe with you, too. 
 
 
Salads are the perfect go-to when you need a quick and filling meal, and while this one does require the use of a stove, you can still have this on the table in a jiffy. The ingredients here are already items we keep stocked in the house regularly, so I was able to make quick work of getting it together on our busiest night of the week when I just didn't feel like putting a lot of effort into piecing together dinner. Normally I just crumble goat cheese into my greens, but warming it beforehand was a new way for me to add it into my salad. And I'll tell you, I'll be doing that a lot more often from now on! For those of you who aren't goat cheese fans, I do think you could swap it out for brie or feta and it would still all come together beautifully. So if you're looking for a new way to take your summer salad game up a notch, this recipe right here will do it for you! 

Ingredients

Salad:

8 cups mixed baby greens

5 tablespoons olive oil

2 tablespoons balsamic vinegar

1 teaspoon Dijon mustard

1 tablespoon GOLDEN BLOSSOM HONEY

1/2 teaspoon fresh thyme

salt and pepper to taste

1 avocado, peeled and chopped

Cheese:

2 logs (3 1/2 ounces each) Montrachet goat cheese

1/2 cup pecans, finely chopped

  1. I like feta on salads the most, followed by the thick cut cheddar. I’m not a fan of goat cheese, though I didn’t mind the flavored ones we had at the Surfing Goat Dairy on Maui!

  2. Good to have a list if salads to shuffle through indeed. Can't say I've ever has goat cheese. Not surprised I'm sure lol

  3. Very nice food styling and a lovely plate as well.
    I don't think I have ever put cheese in a salad, but I have never eaten much cheese, as we did have a farm but without cows or goats. I now only buy a 200g of gauda when I make an oat pizza once in a blue moon.

    1. I've never had Gouda on pizza. We like to make homemade pizzas occasionally so I'm going to have to buy that next time instead of mozzarella and see if I like it.

  5. My favorite cheese for a salad is Feta, but I'm a fan of almost any cheese. I've never tried Limburger but I am guessing I wouldn't like that one... although, I always thought I wouldn't like bleu cheese and now I think Gorgonzola is delicious. We're big salad fans over here, all year long as well and this one looks tasty.

    1. I have never hand Limburger either, so if you ever try it, I expect a report on what you thought! Jason loves bleu cheese but it's the only one that upsets his stomach so we don't buy it often. I think it's ok, but there are other cheeses I'd take over that kind.

  9. I am a salad lover as well and I do make a salad at every meal. This summer has had consistently very high temps in the high 90's , so we have been doing much less cooking and more no cook foods. Thanks for this delicious looking recipe.

    1. I love no cook foods when the temps get unbearable like this. Thankfully just about another month of this then with autumn on the horizon, we can start using our stoves again!
