Can we move on to all the autumn recipes now? I mean, if Starbucks can push up their Pumpkin Spice Lattes which have already been released this week, then I think it's okay if I share an autumn dish today, right? Right (that's me having a staff meeting in my head agreeing with myself, if you're wondering). We've had a noticeable shift in temperatures lately, and even though I'm not fooled that the summer heat is behind us just yet, some butternut squash was calling my name this week. I was just going to drench it in butter and honey like I normally do, but I decided to take a peek at Golden Blossom Honey first to see if they had a recipe that sounded a bit more enticing and landed on this Honey-Yogurt Squash Casserole. I'm always game for a casserole, and this one sounded too good to pass over for anything else.

Honey Yogurt Squash Casserole is everything and more that you'd want in an autumn inspired recipe. I eat this as a standalone meal for lunch or dinner because it is packed with flavor and nutrients and is quite filling. However, for true carnivores like my husband, this is a great side dish for your dinner menu. It's creamy like mashed potatoes, but the sauteed veggies add a lovely texture and the feta pulls it altogether. I am not an overly huge fan of cutting squash because of its tough exterior, but I am thinking that with alterations made to the baking time, you could pull this recipe off just as well with pre-cut frozen butternut squash cubes. I haven't tried that myself yet, but think I may the next time I make this recipe. It might be too early to be thinking ahead to Thanksgiving, but this is one dish that you aren't going to want to sleep on when the holidays roll around. Swap it out for the mashed potatoes and you'll have a new family favorite on your hands in no time!

  1. Looks lovely but I think it needs a spoon or two of flour in the yoghurt/egg mixture to thicken it better. I have already bought four squashes in last few weeks LOL Put some in the freezer to have in the winter.

    1. I actually liked the texture as is, but would definitely add some flour if you like it firmer. You're beating me on the squash purchases. I'll start adding more to my grocery list in the upcoming weeks when they go on sale. Right now they are still full price, but will be cheaper closer to October.

  2. I’m with you on the PITA aspect of cutting up butternut squash. I will only buy the cubes either fresh or frozen. Favorite fall foods would be apples and sweet potatoes I suppose, but I like all the gourds.

    1. All the gourds, I agree! It took me so long to realize how wonderful they are. I don't think I started eating them until I was well into my 30's!

  3. That's an interesting idea. I would try it. I made a fruit crumble the other night and it turned out good. I love fruity deserts.

  4. Seems like a good staple to add for Thanksgiving indeed. Good to know I'm not the only one that has meetings of the voices in my head.

    1. It's probably why we're friends. We're both a little crazy in the head lol

  5. I do like butternut squash but don't like to peel them. They can be so difficult. The recipe sounds delicious with the honey and a good time to make it could be for the Jewish New Year when honey is the star ingredient in recipes such as dipping apples in honey and honey cakes!

    1. Honey apples are sooo good! I wish I would have learned that sooner. I used to only dip them in caramel sauce, but honey is just as amazing!

  6. That's a fun way to use the squash. I don't know that I'd replace the mashed. I have some who would demand my title as 'holiday cook' if I took away them away, but I would definitely be comfortable adding this to the side dishes!! You're right, it has holidays written all over it.

    1. I'm sure I'd get roasted if I replaced the mashed too, but sometimes I think it might be worth it if it got me out of hosting duties LOL!

  8. This Honey-Yogurt Squash Casserole sounds like the perfect way to welcome in the fall season! I love how you’ve taken a classic autumn ingredient like butternut squash and elevated it with the addition of honey and yogurt—it sounds both delicious and comforting. I’m with you on the struggle of cutting squash, so the idea of using pre-cut frozen squash is genius for making this recipe even easier. I can definitely see this becoming a staple for Thanksgiving or any cozy autumn dinner. Can’t wait to give it a try!

    1. You're too kind, Melody! I agree as well that if it's not going to be used for Thanksgiving, it is so inviting and cozy for autumn dinner!
