Honey Yogurt Squash Casserole is everything and more that you'd want in an autumn inspired recipe. I eat this as a standalone meal for lunch or dinner because it is packed with flavor and nutrients and is quite filling. However, for true carnivores like my husband, this is a great side dish for your dinner menu. It's creamy like mashed potatoes, but the sauteed veggies add a lovely texture and the feta pulls it altogether. I am not an overly huge fan of cutting squash because of its tough exterior, but I am thinking that with alterations made to the baking time, you could pull this recipe off just as well with pre-cut frozen butternut squash cubes. I haven't tried that myself yet, but think I may the next time I make this recipe. It might be too early to be thinking ahead to Thanksgiving, but this is one dish that you aren't going to want to sleep on when the holidays roll around. Swap it out for the mashed potatoes and you'll have a new family favorite on your hands in no time!
Ingredients
2 medium-large butternut or acorn squash
1 cup chopped onion
2-3 garlic cloves, crushed
1 cup mixed green and red peppers, chopped
3 Tablespoons butter for saute
2 beaten eggs
1 cup plain yogurt
salt and pepper to taste
1/2 cup crumbled feta cheese
1/4 cup GOLDEN BLOSSOM HONEY

Looks lovely but I think it needs a spoon or two of flour in the yoghurt/egg mixture to thicken it better. I have already bought four squashes in last few weeks LOL Put some in the freezer to have in the winter.
ReplyDeleteI actually liked the texture as is, but would definitely add some flour if you like it firmer. You're beating me on the squash purchases. I'll start adding more to my grocery list in the upcoming weeks when they go on sale. Right now they are still full price, but will be cheaper closer to October.
DeleteI’m with you on the PITA aspect of cutting up butternut squash. I will only buy the cubes either fresh or frozen. Favorite fall foods would be apples and sweet potatoes I suppose, but I like all the gourds.

DeleteI do like butternut squash but don't like to peel them. They can be so difficult. The recipe sounds delicious with the honey and a good time to make it could be for the Jewish New Year when honey is the star ingredient in recipes such as dipping apples in honey and honey cakes!

DeleteThat's a fun way to use the squash. I don't know that I'd replace the mashed. I have some who would demand my title as 'holiday cook' if I took away them away, but I would definitely be comfortable adding this to the side dishes!! You're right, it has holidays written all over it.
