Strawberry-Rhubarb Sundaes

I should have known last week that I was jinxing the end of summer by jumping on the fall inspired recipes since this week we were met with hellish heat advisory temperatures. What do you do when it's too hot to go out, too hot to bake, or just plain too damn hot? You binge watch Netflix and eat ice cream. Well, at least that's what WE did. Even though it's scorching hot right now, I am trying to use up my frozen summer fruits and veggies to make room for new seasonal favorites in the coming weeks. I had a bag of rhubarb that never got used in its intended recipe, but Golden Blossom Honey had me putting it to good use in these Strawberry Rhubarb Sundaes instead.


Nothing beats a sundae on a hot summer day. This sweet, creamy concoction is almost good enough to make me hope summer drags on a touch longer. The sauce topping did take a little longer than normal sundae toppings to prepare, but it was definitely worth the effort! If you're not into sundaes or ice cream, the strawberry rhubarb sauce would also pair well with pancakes, waffles, shortcakes, angle food cake, or pound cake. So many delicious ways to use this recipe, I'm a little bummed I didn't find it sooner in the season. I'll definitely be bookmarking it for more use next year, but if you're looking for a last minute Labor Day recipe this weekend, this is the one you're going to want to add to the menu! 
 

Ingredients

3/4 cup dry red wine

1/2 cup GOLDEN BLOSSOM HONEY

1 teaspoon vanilla

1 cinnamon stick

1 20-ounce bag frozen unsweetened rhubarb

1/4 teaspoon ground cloves

1 20-ounce bag frozen unsweetened strawberries

frozen vanilla yogurt

chopped walnuts (optional)

    1. I don't know how you manage those summer days down there, Rosey. By March I was already dying! I've gotten to the point where I'm even reconsidering TN because I want more chilly days than hot ones.

  2. Looks like a refreshing treat in this ungodly heat, we are still around 40C here, it has been five fecking months of summer and it seems we will have the sixth too, we are turning into Africa. We have not had grass in our yard all summer long, just hay, even my ivy is drying out up on the garden walls, and it has been green for 20 years.

    1. That's saying something when ivy starts to dry up. Ivy is like the cancer of the garden, so hard to get rid of. I stopped trying and am letting it take over my garden beds.

  3. OMG! I love this recipe. I seldom have rhubarb but I'll bet I could make it with just strawberries. I've been doing the same in this heat. Binge watching Netflix and binge eating snacks. Thought I was the only one..

    1. Yes, it would be just as wonderful with just strawberries! It's hard to find fresh here, but thankfully we do have it easily accessible in our frozen foods section.

  6. The red wine was a surprise in the recipe. Yes, the heat and humidity were brutal here AND my car AC went out, so not a good time.

  9. The best thing for hot weather is a delicious ice-cream - this recipe is perfect! But the problem with ice-cream is that after we finish eating it we always want more and more eheheh!!!!

  11. Not sure if my message went through, so just delete this one if you have 2. :) I was just noting how smart it is to pair up the rhubarb and strawberries for a sauce. You had me at ice cream but I bet it WOULD be delicious on a pound cake!
